- Snake River Farms bone marrow, served in a roasted bone with fresh parsley, shaved red onion and roasted Chanterelle mushrooms

- Poached Quail egg, Serrano ham, on toasted brioche crouton with wild greens tossed in a light mustard vinaigrette and finished with sauce béarnaise
