Chef John Sundstrom’s final project in the Central Agency Building, Slab Sandwiches + Pie, will officially open Tuesday, January 13, following its sibling spots Lark and Bitter/Raw. Slab is accessed from the main entrance to the building at 1201 10th Avenue, between Seneca and Union.
As for the namesake pies, there are options both savory and sweet. There is a Slab meat pie stuffed with short ribs, caramelized onion, and hedgehog mushrooms ($9)—and on the sweet side: quince-hazelnut pie with turbinado sugar ($6) and s’mores pie with Theo dark chocolate and smoked marshmallow ($6). There are also a handful of other sandwich accompaniments like cookies, truffled sunchoke chips, and pickles.
There is a full espresso bar as well as Rachel’s Ginger Beer, Dry Sodas, juice, and bottled water. Aside from the to-order food, there is a small selection of goods available, such as salumi and larder items like olives and pickles—think last-minute dinner party and picnic supplies. Sundstrom and the Lark team handpicked their favorite provisions to offer in the cozy shop.
Opened in January 2015, Slab Sandwiches + Pie is a small sandwich shop offering pies and a handful of pantry essentials in Seattle’s Capitol Hill neighborhood. The little sibling of Lark and Bitter/Raw, Slab is a casual spot with takeaway eats and a small standing bar. Sandwiches are made to order with artisan ingredients and handmade components, and slices of both sweet and savory slab pies are available.
