Introducing the Seven Beet Menu at Seven Beef

Seattle, WA, February 4, 2016 – Eric and Sophie Banh are excited to launch the vegetarian Seven Beet menu to run alongside their newest restaurant’s namesake Seven Beef menu. The meal will be $40/person, as is the Seven Beef (Bo 7 Mon) menu.

The vegetarian menu will change frequently with what comes into season, but here’s an example of what guests can expect:
Shaved Fennel with orange
Radish Carpaccio
Triple Cream Cheese with quince compote
Wild Mushroom Ragu
Burnt Carrots
Burnt Parsnips
Butternut Squash Soup

The Seven Beef menu is the Banhs’ updated take on the traditional Vietnamese celebratory dinner. It puts less well-known cuts to work from the whole sides of beef that come in the restaurant weekly, fulfilling the Banhs’ goals of sustainability and using the whole cow.Here’s the Seven Beef menu:

Gỏi Bò beef salad, pickles, fresh herbs, and nước chấm vinaigrette
Bò Nhúng Dấm beef in vinegar
Bò Chả Đùm steamed ground beef, woodear mushroom, glass noodles, and lime
Bò Mỡ Chài grilled beef sausage wrapped in caul fat with garlic, five spice
Bò Lá Lốt grilled ground beef & jicama wrapped in lá lốt leaves
Bò Nướng Xa grilled lemongrass beef with scallion
Cháo Bò Beef congee with mung beans, green onion, cilantro

“The Seven Beet menu lets vegetarians join in on this special meal,” says Banh. “We’re excited for groups with mixed diets to be able to join in for the seven-course meal together.”

Seven Beef is a steakhouse serving classic cuts of beef as well as Eric & Sophie Banhs’ take on the traditional Vietnamese seven-course beef dinner. Opened in October of 2015 in Seattle’s Central District, the restaurant is open and airy, with modern elements contrasted against cozy French farmhouse touches. The menu revolves around a wood fire grill and the whole cows that are broken down in house—dry-aged cuts of beef keep company with abundant seasonal vegetables roasted over open flame. The wine list is almost entirely natural wines, primarily French and French varietals grown on the West coast. Seven Beef is open Sunday through Thursday from 5pm – 10pm, and from 5pm – 11am Friday and Saturday, with happy hour on daily in the bar from 5pm to 7pm.
