Paseo, the beloved, nationally renowned, award-winning Caribbean sandwich shop in Fremont, is expanding to SoDo with the grand opening of its 1760 1st Ave S, Seattle, WA location (on the corner of Holgate St & 1st Ave S) on Thursday, July 28 from 5pm to 9pm (Paseo had a “soft” opening on Monday, and is just open for lunch service until Thursday’s grand opening.)
Located at the center of Seattle’s sports core by CenturyLink and Safeco Fields, the former diner space (Donna’s Diner & Mac’s Smokehouse…both listed on the current sign until Paseo’s new sign goes up), was leased from developer Chris Hansen. The current signage is in-line with the original Paseo of not having a sign, so launching without a sign was a tribute to Fremont. Hansen, as many may know, is working to bring an NBA back to Seattle and his team was very happy to have Paseo’s brand take over and renovate this old diner. According to Paseo owner, Ryan Santwire, Paseo has used the existing infrastructure and character of this storied diner location and made it cool again, giving new life to a vital corner of the city.
The SoDo location features all the iconic sandwiches and favorite entrees from the original Paseo, plus new menu items and beer, wine and sangria (as well as the very special Roasted Corn that has been enhanced.)
