Famed among aficionados for its sweeter taste, elusive blue lobsters are rarely retrieved from the pots of lobstermen along the East coast. On the other side of the Atlantic French lobstermen have better luck, resulting in a combined familiarity and reverence among the region’s haute chefs. The Normandy Bleu’s brilliant hue creates a striking contrast from the darker colors of the seafloor, making them a target for natural predators and diners alike.
Breiman first encountered the Normandy Bleu lobster during his time living in France. While cooking at Michelin-starred restaurants in Eze, Versailles, Caen and Nice, Breiman developed a sense for the dish watching native chefs treat the prized protein with the utmost respect, fusing subtle, complementary flavors to let the delicate flavors of the lobster shine. Combined with the musky yet buttery white truffle, Breiman’s preparation will echo his experience in France.
“We’re always looking for what unique experiences we can bring to our guests next, through our Culinary Adventures series and beyond, and I thought, ‘what can we prepare that would elevate the extravagant white truffle,’” said Coastal Hotels’ Culinary Director Roy Breiman. “I found the answer in the Brittany Bleu Lobster.”
The first annual Winter Truffle will take place at Cedarbrook Lodge on Friday, December 9 and Saturday, December 10, 2016. The weekend will commence with Susanne Carreiro’s truffle talk, author of “The Dog Who Ate the Truffle”. Both Friday and Saturday will include a five course seasonal tasting menu focused on preparations with white and black truffles from around the world, accompanied by wine pairings from Washington State, France and Italy. Guests will learn firsthand from Chef Breiman and Chef Bodinet as they prepare specialty dishes including truffle ice cream, pastas and inventive infusions. Both Friday and Saturday, Jeremy Faber, owner of Foraged and Found Edibles, will talk with guests about how to forage for truffles in their own backyard. Riley Starks of Lummi Island Wild will be in attendance with Stella, his loyal truffle dog. Tickets for the weekend are available for $325, including a copy of Carreiro’s memoir, complete with stories and recipes from her exploration of Umbria.
The Culinary Adventures dovetail with a larger undertaking at Cedarbrook Lodge, where sustainable and locally sourced ingredients are integral to the property’s mission.
