Poke to the Max opens on D Concourse with a little Aloha in every bite
Seattle-Tacoma International Airport (SEA) today announced that Poke to the Max, a food truck turned adored Pacific Northwest dining experience for island favorites, opened on D Concourse. Poke to the Max is a joint venture between celebrity Chef Sam Choy and local Airport Disadvantaged Business Enterprise (ACDBE) and food entrepreneurs, Leeann Subelbia and Max Heigh.
This is the only full-service restaurant and bar for Poke to the Max, including the debut of its first-ever breakfast menu. A convenient to-go counter offers healthy and quick options for passengers in a hurry but still craving ono grinds.
“We are very excited to land in SEA and spread the aloha to each passenger,” said Chef Sam Choy. “Stop in for some great local food!”
Introducing the breakfast menu available until 10:30 a.m., passengers will look forward to feasting on the morning fried rice with a sunny side egg and choice of spam, bacon or chicken sausage, or, the sunrise sandwich served on a sweet Hawai’ian bun and stuffed with egg frittata, Tillamook cheddar cheese and choice of spam, bacon or chicken sausage, just to name a couple. All day menu favorites include Ahi Tuna and salmon poke rice dishes, salads and wraps, garlic fried chicken, teriyaki short ribs and handcrafted musubis. “Having grown up in Hawai’i, I am thrilled to welcome Poke to the Max at Sea-Tac for some of my favorite dishes from home,” said Port of Seattle Commission President Stephanie Bowman. “Poke to the Max is infusing more choice, flavor and aloha for passengers as part of our airport vision.”
This restaurant collaboration between Chef Choy and one of our longtime women- and minority-owned airport concessionaires illustrates the power of economic development through Airport Dining and Retail. Leeann Subelbia is a Seattle food entrepreneur with a legacy working with airport concessions that began in the 1980s. Max Heigh followed in this mother’s footsteps, practically growing up the airport, to now launching Poke to the Max. A true family business, Poke to Max deeps the connection to the Filipino-American and Polynesian community at SEA.
SEA Airport is an economic driver for the Pacific Northwest and a gateway to the globe. We aim to deliver a distinct sense of place to travelers while creating opportunities for small and minority-owned businesses. 54 new restaurants and retailers will open at SEA between 2019 and 2021.
