Acclaimed Valencian chef Perfecte Rocher takes another quarantine culinary pivot with the “XITA Pop Up at Tarsan i Jane”
SEATTLE, WA (July 28th, 2020): The wood fired grill at the critically acclaimed Seattle restaurant, Tarsan i Jane, will be heating up for the summer as Valencian-born chef Perfecte Rocher offers patrons a sizzling special menu, just in time for BBQ season.

The Fremont area restaurant, known for its intimate dining atmosphere and innovative cuisine, had been closed since March due to the COVID-19 pandemic. But starting July 31st, Tarsan i Jane will offer guests a pop-up foodie experience for 3 weekends ONLY. On the special menu for pick-up service, guests can choose between the “XITA’s Classic Burger” ($12.99) or the “XITA’s BBQ Bacon Burger” ($14.99). Both are made with ground Snake River Farms Wagyu beef and served on fluffy Brioche buns. The special menu also offers the “XITA’s Pork Dream Sando” which, like the XITA’s BBQ Bacon Burger, features Tails & Trotters hazelnut finished bacon. The XITA’s Pork Dream Sando also comes with acorn-fed Iberian pork, house BBQ sauce, aged cheddar cheese and pickled red onions.
“When I was 11 I read a book about the Ramones. In the book, they mentioned, their favorite food was burgers and pizza,” said Chef Rocher who was at one time, a professional musician in a rock band. “So at 11, the burger was the first dish I learned to make outside the traditional food I grew up with. I love them and so does Alia (Perfecte’s wife and Tarsan i Jane’s General Manager). “Why XITA? Because if we are going to cook a burger, it’s going to be one we want to eat, cooked over wood fire with the perfect ratio of toppings.”
Guests at the pop-up event will also be able to add on optional snacks to the meal with a choice of Spanish black truffle potato chips, sliced Cinco Jotas acorn-fed Iberian ham, and a jar of assorted spicy Spanish pickles. For a “XITA’s Sweet Treat”, the restaurant offers a camomile pudding with espresso gelee (like an affogato, but way better!)
Tarsan i Jane is also excited to partner with neighboring Fremont business, Bad Jimmy’s Brewing Co., for this pop-up experience. Guests can pair their meal with the brewery’s Blood Orange Honey Wheat Ale and Imperial IPA in exclusive 16 OZ cans.
The “Xita Pop Up at Tarsan i Jane” will launch July 31st and continue for 3 weekends, Fridays through Sundays from 12:00PM – 5PM. Only 100 burgers will be available per day. Advanced reservations through TOCK are required for contactless payment.
About Chef Perfecte & General Manager Alia Rocher:
Perfecte Rocher is the chef and owner of Tarsan i Jane Restaurant in Seattle, WA. He is originally from Valencia, Spain, the birthplace of paella. Perfecte left his village to become a professional musician in London before returning to the kitchen. Since then he has traveled the world to work and stage in some of the best restaurants including El Bulli, Manresa, Campton Place, Smoke Oil Salt, Manor House Hotel, Richard Camerena, and Martin Berasategui.
Alia Rocher started her restaurant career in the front of the house before transitioning to the back where she cooked and worked as a butcher. She has worked in such notable kitchens as MB Post and Bestia and as a butcher at Belcampo Meat Co before serving as a judge on the cooking competition show, Man vs Child. Alia has also worked in farms, cheese rooms and bakeries in California and across Europe.
