Conscious Hospitality Group Unveils Three New Food and Beverage Concepts: KODE, Club Seltzer, EATDIRT

Region’s first non-alcoholic seltzer bar, Detroit-style, Korean-influenced pizza, and first-of-its-kind salad delivery service bolster CHG’s portfolio of concepts 

Conscious Hospitality Group (CHG), the visionary company behind Just Poké, Matcha Magic, Pure Acai Bar, and Sugo, is thrilled to introduce three new food and beverage concepts to Lincoln Square South at The Bellevue Collection.

Soft opening slated for September 20, 2024, Club Seltzer, KODE and EatDirt complement the local, bold, fresh mix of casual dining experiences.

The three new concepts include: 

Club Seltzer is the region’s first non-profit seltzer bar, catering to health-conscious consumers seeking non-alcoholic and adaptogen-enhanced alternatives to traditional alcoholic beverages. Guests will be transported to their favorite beach club, sipping adaptogen and fruit-infused mocktails. Club Seltzer drinks are made using pure, natural ingredients and bursting with the essence of fresh fruits that taste great and make you feel great, too. To address climate change, all profits from sales go to select organizations emphasizing climate restoration and environmental integrity. These currently include Cool Earth to protect rainforests and SeaTrees to reforest the oceans. 

KODE is a celebration of Detroit-style pizza infused with vibrant Korean-inspired flavors and toppings. According to Jane Kang, Head of Culinary at KODE, Korea has been at the forefront of popularizing Detroit-style pizza using cheese in unexpected combinations. KODE pizzas start with a thick, airy crust baked to perfection in signature blue steel plans, resulting in delightfully crispy edges and a chewy center. The menu features a variety of bold, tangy Korean-inspired sauces like spicy gochujang and savory bulgogi marinated with toppings ranging from marinated spicy chicken to fresh kimchi and crispy seaweed. KODE’s design nods to midwestern roots with white subway tile and Asian street food with a neon red glow. 

EatDirt is the first brick-and-mortar location of the EatDirt fresh produce delivery service. Guests will be delighted by delicious and healthy salads, sandwiches, juice, and a bone broth bar, providing a glimpse into the freshness and simplicity of its delivery service. In partnership with Charlie’s Produce and local farmers, EatDirt offers the freshest produce alive to your doorstep simplifying healthy veg-forward eating and reconnecting consumers to their food and earth. Guests of the space will be intrigued by hanging vegetables that appear to float in chaotic order until you look from just the right angle to spell EatDirt. www.eatdirt.co

Eastside native, Zac Levine is credited with the conceptual design of the space and brand strategy. The overarching feel of the space is retro-super-future-design, hints of nostalgia with an exciting element of newness. 

“Given CHG’s ties to the Pacific Northwest and our focus on amplifying a local offering, we knew this partnership would be perfect for the Food Hall and the audience it serves – and I cannot wait to try Korean-inspired flavors on Detroit-style pizza!” says Jennifer Leavitt, vice president of marketing for the Bellevue Collection. “In addition to the successful local-to-global offering of The Dining District at The Bellevue Collection, the Lincoln South Food Hall experience continues to bring a vibrant social meal-sharing aspect to our mix.”
